The Ultimate No-Bake Peanut Butter Chocolate Bars
Looking for a foolproof, crowd-pleasing treat for Father’s Day? Look no further. This recipe—featured by Jennifer Holmberg, author of Colorful Cooking with Jennifer—is a vibrant, upgraded take on the classic peanut butter cup. It’s rich, salty-sweet, and requires absolutely zero time in the oven.
Perfect for hot summer days, these bars come together with simple pantry staples and set beautifully in the fridge. To make vegan, simply substitute vegan butter or coconut oil for the regular butter.
Ingredients
1/2 cup butter (or vegan butter or coconut oil, if desired)
1/2 cup packed brown sugar
2 1/2 cups confectioners' sugar
2 cups peanut butter
1 teaspoon vanilla extract
8 oz. Bibamba dark chocolate for baking
Directions
- Melt butter over low heat. Add sugars, peanut butter, and vanilla. Mix well.
- Grease a 9 x 13 pan or line with parchment paper. Press peanut butter mixture into pan. Let sit to cool slightly.
- Melt chocolate and spread over the top. Sprinkle with kosher salt if desired.
- Cool in refrigerator for at least 1 hour to set.
- Once cool, remove from fridge and return to room temperature. Cut carefully into squares or bars, as small as 1 x 1 inch, or larger depending on preference.
Store uneaten bars in refrigerator or freezer.
