Introducing Denver Union Station in Chocolate

It all started with a question from chocolate maker Avery Lankford: What’s something new and unique I could make out of chocolate? 

The answer: a Colorado icon, just in time for Colorado’s 150th birthday. Because what’s a birthday celebration without chocolate, after all? 70 pounds of chocolate, to be precise.

Avery’s idea soon took shape: she'd build a chocolate replica of one of Colorado’s most iconic landmarks, Denver Union Station. The sculpture made its debut just ahead of Colorado Day on August 1, when Colorado celebrates 150 years of statehood. 

Here’s a look at what went into turning a Denver landmark into chocolate.

How did it come to life?

Creating a miniature Denver Union Station out of chocolate was no small undertaking.

Avery worked from photographs of the landmark, using math, careful construction, and creativity to translate its architecture into chocolate.

Creating a model of Denver Union Station completely out of chocolate was definitely a unique challenge. I worked from many different photographs and used both math and creativity to construct this piece, from the general structure to the intricate details.

The finished piece weighed in at 70 pounds, transformed into an impressive replica of Denver Union Station spanning 4 feet long, 20 inches wide, and 20 inches tall.

And yes—every bit of it is made from Bibamba’s signature 60% dark chocolate.

Even Denver Union Station itself gave it the seal of approval, commenting on our social post: “The likeness is uncanny!”

A sweet tribute to a Colorado icon

Denver Union Station has been part of Colorado’s story for more than a century, welcoming travelers, connecting communities, and becoming one of Denver’s most recognizable landmarks.

For Bibamba Co-Founder and CEO Patrick Tcheunou, the sculpture reflects the journey at the heart of Bibamba—from roots in Cameroon to a home in Colorado.

As a Colorado chocolate maker, we wanted to create something that celebrated the place we call home—and the people who make this state so special. Avery did an incredible job crafting this tribute.

The sculpture is now on public display at Bibamba’s Chocolate Factory inside Edgewater Public Market.

The intricate details are best appreciated up close, when you can really see just how much work went into turning chocolate into architecture. (Not to mention, you can enjoy the delicious aroma of fresh chocolate wafting from those beautiful arches!)

Come see it for yourself, take a photo, and sample the 60% dark chocolate used to create the replica—along with plenty of other delicious flavors. Admission is free, and no ticket is required.

The timing couldn’t be more fitting. As Colorado celebrates 150 years of statehood, August also marks six years of Bibamba in Colorado.

Our chocolate journey began on our family farm in Cameroon. Today, that journey continues from Cameroon to Colorado, where we transform our family’s cacao into handcrafted chocolate and share it with our community.
